NOTE: You may want to work in batches depending on your pan size. In a large skillet over high heat, melt half of butter.

Sauté carrots, onions, bell pepper, garlic, and peanuts. Cook until onions become translucent.

Add remaining butter and rice, peanut butter, soy sauce, and water.

Sauté for another 4 minutes

Add sesame oil, stir to combine, and remove from heat.
