Heat a large pot over medium heat.

Add sausage & stir until cooked through (break up sausage if loose, or slice sausage beforehand if using links).

Remove sausage and add olive oil.

Stir in onions, celery, & carrots. Cook until they are tender.

Add garlic & stir for about 30 seconds until aromatic.

Add water/chicken broth and lentils, then bring to a boil.

Reduce heat, cover, and simmer until lentils are tender.

Season to taste with salt & pepper.
