Heat ground turkey in a large pan over medium heat. Stir until ground turkey is cooked through (internal temperature should be 165 degrees F).

Remove turkey from pan and oil.

Add mushrooms, onions, bell peppers, and jalapenos. Cook, stirring frequently, until the mushrooms start to get soft.

Stir in taco seasoning, then add kale and cook until kale has wilted.

Incorporate ground turkey into the veggie mix and turn off the heat.

Serve topped with pico de gallo, shredded cheese, and half an avocado.
